시대성을 반영하는 건 응당 당연한 일입니다. 물론 고전적인 것을 재현하는 것도 중요하지만, 시장의 선택, 대중의 사랑을 받아야 하는 만큼 현 시장의 흐름을 반영하는 것도 단연 중요하겠지요. 그저 무게중심을 어디에 둘 것이냐의 차이라고 생각합니다. 그러한 의미에서 포멜로빈은 특정한 오리지널리티를 따르기보다는 한국적인 커피라는 키워드를 중심으로 **동시대성(Contemporary)**을 반영하고자 합니다. 쉽게 말해 현대적인 요소를 가미하겠다는 의미이지요. 그렇다면 현대적인 의미란 무엇인지, 포멜로빈이 반영하고자 하는 동시대성이란 무엇인지에 대해 설명하며 한국적인 커피에 관한 내용은 매듭지을 수 있게 하겠습니다.

격변의 시대입니다. 많은 것이 쉽게 변하고 쉽게 사라지며, 무엇하나 안정적으로 그 자리에 머무르지 않습니다. 그러나 그것이 늘 이롭지 못하다고 볼 순 없겠죠. 그것은 순리이자 자연이며 그에 맞춰 연구하고 발전시키는 게 브랜드의 몫일 테니까요. 사실 국내 커피의 역사도 비슷한 맥락을 갖고 있습니다. 커피가 한반도에 상륙했을 당시에는 탄 듯한 쓴맛을 강요받다가, 스페셜티 커피가 유행하며 산미가 특별함을 대변해 주는 요소가 되기까지의 시간은 얼마 걸리지 않았습니다. 그리고 우리는 후자를 현대 커피라고 정의하기로 했지요. 저희는 현대 커피가 지닌 특징을 존중합니다. 실제로 포멜로빈이 추구하는 조화(調和)의 영역에서도 산미는 매우 주요한 역할을 합니다. 맛을 돋우고 균형을 잡는데 아주 혁혁한 공헌을 하지요. 그래서 저희는 현대 커피를 상징하는 산미라는 미감을 맛을 대표하는 것이 아닌 지향하는 맛을 표현하는데 필요한 하나의 핵심적인 요소 정도로 활용하고 있습니다.

At Pomellow Bean, we don’t follow a fixed idea of originality. Instead, we shape Korean coffee with a focus on contemporaneity—infusing it with elements that speak to the here and now. In this final piece, we’d like to share what “contemporary” means to us, and how it completes our vision of Korean coffee.

We live in turbulent times—where things change quickly, disappear easily, and rarely stay still. But change itself is not the enemy. It is part of the natural flow, and it is our role as a brand to learn, adapt, and grow with it.

The history of coffee in Korea reflects this, too. In its early days here, coffee was often defined by harsh bitterness. But it didn’t take long for bright acidity—introduced through the rise of specialty coffee—to become the mark of something new, something modern.

We fully respect what is often called modern coffee. In fact, as we shared in our previous piece on harmony, acidity plays a crucial role—it sharpens, balances, and elevates flavor.

This is why we embrace acidity not as a trend, but as an essential element in how we express taste at Pomellow Bean.
